In Like a Lion

Happy March!

Here's hoping that the sun will continue to shine and melt some of the massive mounds of snow that we still possess!  I'm fairly certain, that this time last March we were rocking sneakers and shirts, not snow pants and boots!

Crumby things...Again, apologies for a delayed entry.  I've been up to my eyeballs in cake, and now cookie, prep.  I have 2 big requests for this weekend.  One, an ocean-themed cake for one of my favorite little girls.  The other, an order of cookies to announce the pregnancy of one of my friends.  So very excited to do both!

Kiddo things...this one happens to be a recipe, courtesy of my 5 year old.   He requested "those crispy chicken thingies".  That stumped me for a minute until he attempted to describe them.  Then it hit me...forever ago I took some egg roll wrappers (not sure why they were in the fridge anyway, but they worked), leftover shredded chicken, cheese, and taco seasoning and rolled them up, sealing with a dab of water.  







Lightly fry them in a skillet and let him dip them in ranch dressing.  A HUGE hit with the toddle crowd!  So much so that I now tend to keep a package of egg roll wrappers in the fridge because they're super versatile!  You can fill them with just about anything!  We've done pulled pork (my personal favorite) as well.  You can cut out little circles, pop them in a greased mini muffin pan, bake til crispy and lightly browned for perfect bite-sized appetizer scoops.  I filled those with a buffalo chicken dip (thanks Julia!).

Crafty things...not a craft I can do, though many of you can!  This one is a shout-out to my buddy Becca, who has started her own Etsy shop.  She only has a few things listed right now, but follow her or PM her and put in your request!  She's made Minion hats for the boys and a matching scarf, hat, mug coozy for me.  She's good and I'd love to keep her in business!


Up next week...more cake!  We have a fun tradition at work to bring cake for everyone's birthday.  The person who had the previous birthday brings the next person's cake.  So, since I was the last one, I get to make Hannah's cake.  She put in a request for a repeat of last year, so ice cream cake with brownie bottom and Carvel knock-off chocolate crunchies!  Can't wait!
