Find Me an Island!

I swear, if I see or smell any more vomit, I'm going to cry.  Ok, I can't even count how many times I almost cried over the past week!  Yes, I had some mild version of the stomach bug, but it ran rampant all weekend with my boys.  We hit a new record...5 loads of laundry in under 24 hours.  All of it thanks to the bug, not "normal" laundry.  Finally took my little guy to the doctor, who diagnosed it as "viral gastroenteritis" aka. the stomach bug.  Now, I don't exactly have "MD" after my name, but I could have declared that one without a $20 co-pay!  She did say that the symptoms often persist for 10-14 days with the little ones.  Seriously?!?!  Enough's enough.  I want to find my island and stay there for a good long time!

In between sick kiddos, I've been working on fondant critters for my friend's daughter's birthday cake.



She wanted an ocean themed cake and I think these guys will do the trick.  As much as I've loved making her previous cakes...





I absolutely LOVE how the ocean one is coming together!  This time I'm opting for cupcakes with a small center cake with her name and number.  The best part of making cakes for my friends, Heather and Mike, is that they totally give me free reign to do whatever comes to mind.  They always give me a theme and number of guests, but that's it.

What recipes have I tried this week?  Limited, for sure, thanks to the bug.  I did try this one for Pumpkin Peanut Butter Chocolate Chip bread.  I made it into mini muffins, much preferred by my wee ones.  No added fat (the only fat comes from the peanut butter) and they are delicious!  It made 36 mini muffins, which I baked for about 12 minutes.  Perfect!

Here's crossing our fingers that we are all done with the bug, that I don't have abnormal amounts of laundry to do and that spring finally gets here so we can open the windows and rid ourselves of all germs!
